| | This year is warm and Spring arrives 3 weeks ahead of schedule, therefore, the Maple Syrup(楓樹糖漿) harvest season officially begins this weekend.

Maple trees that are more than 40 years old have sugar accumulated at the bottom of the tree. During Spring time when the temperature warms up, the sugar (known as SAP), rises, and if you put a tube at the right place, you will be able to collect it.
After the SAP is collected, it has to be boiled, condensed and refined. It takes 10.5 gallons of SAP to make 0.25 gallons of Maple Syrup.
Therefore, every bottle of Maple Syrup is valuable. Next time when you use a bottle of Syrup for your pancake, think of how many trees are needed to produce just that jar for you, and you will not won't to waste any drop.

There is no doubt Maple Syrup is a Canadian Special Product, although some American cities also produce these, but certainly not as much as Canadians.
